I was relaxing a few nights ago, feet up after a hard day of expat-ing, and enjoying the delightful blog Sometimes Sweet. Little did I know I was about to stumble upon a solution to a common problem in Cambo: too many bananas!
I love that you can get a literal bunch and a half of small, sweet bananas for under a buck, but at the same time a girl only needs so much potassium, and the shelf-life of these bananas is exceptionally short. Luckily, Danielle posted about a homemade fruit version of frozen yogurt featuring... wait for it... bananas.
Next time your bananas start going bad, chop them up and put them in the freezer. When you're ready for an easy-as dessert, blend the frozen bananas up with some dry powder cake mix (I couldn't find cocoa powder, as Danielle originally instructed) and a splash of water or milk. Or cream, if you're feel indulgent. And maybe some avocado? Mmmm.
You can eat it frozen, or thaw it out and turn it into a pudding. Either way, it's delicious, cheap as chips (especially compared to the $7 tubs of ice cream offered at Lucky), and saves you from tossing bananas when you've just got too darn many. Get on it!

I can attest to the fact that this is super delicious! I loves me some ice cream, but this a a great and worthy alternative. Kind of like banana cake's Aesop Rock to ice cream's Jay Z. Both are great but one has a strangeness that makes it appealing in it's rejection of conventions. Ah, and also I love chocolate and banana stuff!

DeleteOooo!!! Gonna have to try this fo sho! Our smoothie making has been blasting through the bananas pretty well, but we somehow manage to still have extras that have gone all inedible for my tastes (I don't like even a hint of mush or brown spots!) How do the bananas and cake mix blend together if they're frozen? Doesn't your blender just toss chunks of frozen bananas about? Maybe you've got a better blender than we do. Either way, I'm gonna attempt this...even I can't screw this one up, right?

DeleteTo be honest, our blender probably isn't any stronger than your cutie heart-shaped-buttons one. I let the bananas sit in our warm Cambodian air for a few minutes after I took them out of the freezer, so they still had the frozen effect, but were way more malleable. But then - ta da! - it worked! Easy peasy!

You may recall my wierdo habit of throwing whole bananas into the freezer on the premise of making banana bread, but never baking and ending up with a fridge full of Bananas come moving day. Now I have learned to freeze them peeled and use them in breakfast kale smoothies. I think I will have to give this recipe a try for dessert!

DeleteSounds like wicked good smoothie combo, my dear. I've always mixed kale with strawberries in smoothies, but never with bananas. Found Chinese Kale at the grocery store today, so reckon I'll be giving it a try.
LOVE chocolate avocado pudding, btw! It's PIC's signature dish. He makes it really similarly to the recipe at your (v. humorously named) link - he mixes cocoa powder, honey, 2-3 avocados and cream... holy wow, it's incredible. Better than regular chocolate mousse, and it even makes your skin+hair extra pretty! Thanks for sharing the link and the thoughts, love!
Oh yum! You could also try cutting them into chunks, freezing them, and then dipping them into melted chocolate! Perhaps rolling them in coconut after? Or sprinkles? Or crushed up Oreos? The possibilities are endless!
